Does this cook fit your day?

About 30–40 min hands-on · 1 hr 3 min–1 hr 13 min, including 30 min marinating total

About 20 minutes of prep plus turning and checking the skewers. The 30-minute refrigerated marinade is mostly hands-off; total timing is an estimate.

Hands-on time is an estimate for the original batch, including prep and finishing. Total time includes cooking and resting. Larger batches can take longer.

Cooking terms explained
Use the equipment you have

Use a conventional grill at about 425°F or a Traeger/pellet grill at 450°F. A thermometer matters more than the brand of grill. Keep the lid closed between turns.

Before you shop

Sirloin offers a practical balance of tenderness and price; compare local cuts.

Make it a meal

Add rice or warm flatbread and a simple yogurt sauce. Plan on about 2 skewers per person, depending on how many you make; serve extra vegetables or salad alongside.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINEBeef must reach 145°F, followed by at least a 3-minute rest
  1. Prep the steak and vegetables

Cut the sirloin into roughly 1¼-inch cubes. Cut the bell peppers and red onion into similar-size pieces; separate the onion into small stacks of layers. Slice zucchini into ½–¾-inch rounds, halving wide rounds. Consistent pieces cook more evenly.

  2. Mix and marinate

Whisk together the olive oil, soy sauce, Worcestershire sauce, lemon juice, minced garlic, and black pepper. Before adding any raw beef, reserve 1 tablespoon in a separate clean bowl for the vegetables. Toss the steak with the remaining marinade and refrigerate for 30 minutes. Soak wooden skewers in water for at least 30 minutes.

  3. Preheat and assemble

Preheat a conventional grill to medium-high, about 425°F. For a Traeger or other pellet grill, preheat to 450°F with the lid closed and allow the grates to heat fully. Toss the vegetables with the reserved clean marinade. Thread steak, peppers, onion, and zucchini onto 8–10 skewers, leaving small gaps instead of packing the pieces tightly. Discard the marinade that touched raw beef.

  4. Grill with checkpoints

Place skewers on clean, lightly oiled grates. Turn with tongs every 2–3 minutes, closing the lid between turns. Start checking the steak around 8–10 minutes; allow roughly 10–14 minutes on a conventional grill or 12–20 minutes on a pellet grill, with more time if needed. These are estimates: cook the beef to 145°F and check the center of several pieces without touching the skewer. The vegetables should be lightly charred and tender-crisp. If the steak finishes first, move it to a clean platter and finish the vegetables separately.

  5. Rest and serve

Transfer to a clean platter and rest for at least 3 minutes. Handle hot skewers with tongs or oven mitts. Serve with rice or warm flatbread and a simple yogurt sauce. A little roasted garlic compound butter is an optional finish.

TEMPERATURE NOTE

Cook beef to 145°F and rest at least 3 minutes. Insert the thermometer into the center of several steak pieces without touching the hot skewer. Use a clean platter for cooked food and discard marinade that contacted raw meat.

SMALL DETAILS, BETTER COOKS

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. 20 minutes hands-on prep

Cut the steak and vegetables and mix the marinade. Keep raw-meat utensils separate from the serving platter.

  2. 30 minutes to marinate

Refrigerate the beef. Soak wooden skewers during this time, then preheat the grill and thread the skewers.

  3. 10–20 minutes to cook

Turn regularly and check several steak pieces with a thermometer. Pellet grills and thicker pieces may take longer.

  4. At least 3 minutes to rest

Rest the cooked skewers, then serve with rice, flatbread, or a simple salad.

WHEN THE COOK HAS QUESTIONS

A little help.

What steak works best?

Sirloin is a practical starting point: tender enough for quick grilling without needing a premium steak. Trim tough connective tissue before cubing. Stew meat can be tough with this quick method.

Can I use my Traeger?

Yes. Use the 450°F pellet-grill method in the steps. This is a hot, relatively quick cook rather than a low-and-slow smoke. Actual timing depends on the grill and piece size; use a thermometer.

Can I prepare these ahead?

Cut the vegetables and keep them covered in the refrigerator. Marinate the steak separately for 30 minutes, then thread shortly before cooking. Avoid an overnight acidic marinade that can change the texture.

Why are my vegetables still firm?

Mixed skewers give you tender-crisp vegetables. For softer vegetables, put them on separate skewers so they can cook longer without overcooking the steak.

How do I keep wooden skewers from burning?

Soak them at least 30 minutes, keep exposed ends away from direct heat, and shield the ends with foil if they darken quickly. Soaking helps but does not make wood fireproof. Metal skewers are reusable but stay hot.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate in shallow containers within 2 hours, or within 1 hour when it’s over 90°F outside. Keep refrigerated at 40°F or below and use within 3–4 days.

Reheat

Reheat leftovers covered with a little water or broth until they reach 165°F throughout.

Next-day idea

Slide leftovers into a rice bowl or warm pita.
