About 25–35 min hands-on · 55–65 min total

Most of the hands-on work is filling and wrapping. Set aside the prep time rather than treating these as a last-minute side.

Hands-on time is an estimate for the original batch, including prep and finishing. Total time includes cooking and resting. Larger batches can take longer.

Keep bacon overlap small. Double layers can stay soft while the exposed parts brown.

Cooking terms explained
Use the equipment you have

Use a smoker or a grill set up for indirect heat. The peppers cook away from direct flames; no special pepper rack is required.

Before you shop

Regular-cut bacon works here; thick-cut strips take longer. Check the ingredient list before buying a larger package than you need.

Make it a meal

Let the filling cool for the full rest before serving. Offer a mild side too, since individual jalapeños vary in heat.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINE165°F in the filling; bacon fully cooked
  1. Prepare the peppers

Preheat to 375°F with indirect heat. Wearing gloves if desired, halve jalapeños lengthwise and remove seeds and inner ribs with a spoon. Avoid touching your eyes.

  2. Fill and wrap

Mix cream cheese, cheddar, garlic powder, and paprika. Divide among the 12 halves. Wrap each with half a slice of bacon, keeping overlap minimal; place seam-side down.

  3. Cook indirectly

Place on the indirect side of the grill, or in the smoker. Close the lid and cook 30–40 minutes until peppers soften, bacon is fully cooked, and filling reaches 165°F. Rotate the tray or positions for even cooking. Check the center of the filling with an instant-read meat thermometer, keeping the tip off the grate or tray.

  4. Rest briefly

Let stand 5 minutes before eating. The filling stays very hot even when the outside looks ready.

TEMPERATURE NOTE

Use a thermometer to check the filling reaches 165°F and ensure the bacon is fully cooked.

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. 65 minutes before serving

Set up indirect heat and prepare the peppers.

  2. Next 30–40 minutes

    Cook away from direct flames.

  3. Last 5 minutes

Let the filling cool slightly before serving.

WHEN THE COOK HAS QUESTIONS

A little help.

Why is the bacon still soft?

Thick-cut bacon and heavy overlap take longer. Use regular-cut strips, stretch gently, and avoid double layers.

How can I make them milder?

Remove the ribs thoroughly and choose larger peppers. Heat still varies from pepper to pepper.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate in shallow containers within 2 hours, or within 1 hour when it’s over 90°F outside. Keep refrigerated at 40°F or below and use within 3–4 days.

Reheat

Reheat on a rack in a 350°F oven or air fryer until the filling reaches 165°F. Watch the bacon so it does not burn.

Next-day idea

Chop into a grilled cheese filling.
