Does this cook fit your day?

About 10–15 min hands-on · About 2 hr 15 min total

A few minutes of scoring and seasoning, followed by about 2 hours on the smoker. Warm the jelly while the cheese finishes.

Hands-on time is an estimate for the original batch, including prep and finishing. Total time includes cooking and resting. Larger batches can take longer.
First time? Start here

Start with a cold, full-fat brick and keep it on a tray. The softened block is difficult to move without support.

Cooking terms explained
Use the equipment you have

Use a smoker or pellet grill at 225°F. A foil-lined baking sheet works; no specialty pan is needed. An oven also works, with less smoky flavor.

Before you shop

One 8 oz brick serves about six as part of an appetizer spread. Use the remaining jar of pepper jelly for sandwiches or another batch.

Make it a meal

Set out crackers and a spreading knife alongside ribs, grilled chicken, or other appetizers. This is a snack portion, not a main course.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINELightly golden outside; soft and spreadable in the center
  1. Preheat and prepare

    • Preheat the smoker to 225°F with indirect heat. Apple, cherry, or pecan wood works well.
    • Unwrap the cold cream cheese and place it on a small foil-lined baking sheet or in a shallow heat-safe dish. Keep it supported throughout the cook; do not put it directly on the grates.
  2. Score and season

    • Use a knife to score the top in a crosshatch pattern about ¼ inch deep, without cutting through the block.
    • Brush the top and sides lightly with olive oil. Mix the paprika, garlic powder, black pepper, and salt, then sprinkle evenly over the top and sides.
  3. Smoke until soft

    • Place the tray in the smoker and cook uncovered for about 2 hours at 225°F. Start checking at 90 minutes.
    • Look for a lightly golden exterior, opened score marks, and a soft, spreadable center. Keep it away from direct flame; it should hold its general shape.
  4. Warm the jelly

    • Near the end of the cook, gently warm the pepper jelly in a small saucepan over low heat, stirring just until spoonable.
    • Spoon it over the cream cheese after removing the tray from the smoker.
  5. Serve warm

    • Let stand about 5 minutes, then serve from the cooking dish with crackers and a spreading knife.
    • Put out smaller portions if serving over a long gathering and refrigerate leftovers promptly.
SERVING & STORAGE

Keep refrigerated until prep. After cooking, refrigerate within 2 hours, or within 1 hour if the outdoor temperature is above 90°F. Keep refrigerated at 40°F or below and use within 3–4 days.

SMALL DETAILS, BETTER COOKS

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. 2 hr 15 min before serving

Preheat the smoker, score the cold block, and season.

  2. Next 2 hours

Smoke at 225°F until golden and spreadable; start checking at 90 minutes.

  3. Last 5 minutes

Add warmed pepper jelly, rest briefly, and set out crackers.

WHEN THE COOK HAS QUESTIONS

A little help.

Can I use whipped cream cheese?

Use full-fat brick cream cheese for this recipe. Whipped or spreadable cream cheese in a tub will not hold the same shape.

How spicy is it?

The pepper jelly controls most of the heat. Choose mild jelly for a family-friendly batch or hot pepper jelly for more kick.

Can I use a BBQ rub?

Yes. Replace the paprika, garlic powder, pepper, and salt with about 1½ teaspoons of your favorite BBQ rub. Start lightly if the rub is salty.

Can I make it in the oven?

Yes. Bake on a supported tray at 225°F until golden and spreadable, checking from 90 minutes and allowing about 2 hours. It will have less smoky flavor than the smoker version.

Can I double it?

Use separate blocks with space between them. Keep the same smoker temperature and check texture rather than doubling the cooking time.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate in shallow containers within 2 hours, or within 1 hour when it’s over 90°F outside. Keep refrigerated at 40°F or below and use within 3–4 days.

Reheat

Reheat covered in a 300°F oven until the center reaches 165°F. Loosen the jelly with a small splash of water if needed.

Next-day idea

Spread chilled leftovers on a toasted bagel or use as a sandwich spread.
