About 25–30 min hands-on · 9 hr 5 min–13 hr 30 min (includes marinade) total

Plan on an 8–12 hour overnight marinade and about 65–90 minutes for prep, cooking, and resting. Smoker timing varies with steak thickness.

Hands-on time is an estimate for the original batch, including prep and finishing. Total time includes cooking and resting. Larger batches can take longer.

Look for the long parallel fibers before you cook. Slice across those fibers after resting to shorten them for tender bites.

Cooking terms explained
Use the equipment you have

Use a smoker or pellet grill at 300°F. A Blackstone or cast-iron skillet is optional for the final sear.

Before you shop

The base recipe uses 2 lb flank steak for 6 servings with sides. Buy enough citrus to yield the listed juice amounts; fruit size and juiciness vary. Pantry quantities are measured portions, not full packages.

Make it a meal

Serve with warm tortillas, rice, beans, or a simple salad. Prepare sides while the steak smokes, then warm tortillas and arrange toppings during the rest.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINE145°F internal, followed by a 10-minute rest
  1. Make the marinade

    • Whisk together the fresh orange, lime, and lemon juices, olive oil, cilantro, garlic, jalapeño, soy sauce, cumin, chili powder, oregano, salt, and pepper listed for the marinade.
    • Place the flank steak in a resealable bag or nonreactive covered dish. Pour over the marinade and turn to coat.
  2. Marinate overnight

    • Refrigerate for 8–12 hours, turning once if convenient.
    • Avoid extending the citrus marinade beyond 24 hours; the surface can become overly soft.
  3. Preheat and season

    • Preheat the smoker to 300°F. Meanwhile, combine all carne asada rub ingredients.
    • Remove the steak from the marinade and discard the used marinade. Pat the steak dry with paper towels, then sprinkle the rub evenly over both sides.
  4. Smoke the steak

    • Place the steak directly on the smoker grates. Cook approximately 35–60 minutes, flipping once if needed for even cooking.
    • Start checking internal temperature at 25 minutes. Insert an instant-read thermometer sideways into the thickest part; thickness matters more than the clock.
  5. Choose your finish

    • Smoker-only: Continue cooking until the thickest part reaches 145°F.
    • Optional seared finish: While the steak smokes, preheat a Blackstone or cast-iron skillet over high heat. Transfer the steak at approximately 130–135°F, then sear about 1–2 minutes per side, checking frequently, until it reaches 145°F.
  6. Rest and prepare toppings

    • Transfer to a cutting board and rest for 10 minutes.
    • While the steak rests, warm tortillas and arrange any toppings.
  7. Slice against the grain

    • Find the direction of the long muscle fibers and slice across them into thin strips, holding the knife at a slight angle.
    • If needed, divide the steak into shorter sections first to make slicing easier.
TEMPERATURE NOTE

USDA guidance for whole beef steaks is 145°F followed by at least a 3-minute rest. This recipe uses a 10-minute rest. Marinate in the refrigerator and discard marinade that touched raw beef.

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. The night before

Mix the marinade and refrigerate the steak for 8–12 hours.

  2. About 65–90 minutes before serving

Preheat the smoker, mix the rub, pat the steak dry, and season.

  3. Next 35–60 minutes

Smoke, checking temperature from 25 minutes onward. Sear if desired.

  4. Last 10 minutes

Rest the steak while warming tortillas and arranging toppings, then slice against the grain.

WHEN THE COOK HAS QUESTIONS

A little help.

Can I use a store-bought rub?

Yes. Substitute your favorite carne asada seasoning for the homemade rub, following its suggested quantity. Reduce the marinade salt if the seasoning is particularly salty.

Do I have to sear it?

No. The sear adds a browned crust, but the recipe also works entirely on the smoker.

How long should I marinate it?

Refrigerate for 8–12 hours. Avoid going beyond 24 hours because prolonged contact with citrus can soften the surface too much.

Why is my flank steak chewy?

Slice thinly across the muscle fibers, not along them. Use a thermometer to avoid overshooting the target temperature.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate in shallow containers within 2 hours, or within 1 hour when it’s over 90°F outside. Keep refrigerated at 40°F or below and use within 3–4 days.

Reheat

Reheat gently in a covered skillet with a splash of water or broth until leftovers reach 165°F. Avoid prolonged cooking, which can dry out thin slices.

Next-day idea

Chop into quesadillas or serve over rice with salsa and avocado.
