Salmon with Green Goddess Sauce

Cuisine: American

Golden salmon with a bright, creamy herb sauce. Greek yogurt, parsley, chives, and lemon keep the sauce fresh enough for rice and vegetables, too.

Make the sauce before cooking so the salmon can go straight to the table.

Cooking terms explained
Use the equipment you have

Use Cast iron, Grill. A thermometer and everyday kitchen utensils cover the essential checks; special serving gear is optional.

Before you shop

Frozen salmon portions can be practical; thaw in the refrigerator before cooking.

Make it a meal

Serve with rice and asparagus, or a green salad.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINESalmon must reach 145°F in its thickest part
  1. Blend the sauce

Blend yogurt, parsley, chives, dill, lemon juice, garlic, Dijon, and ½ tsp of the Diamond Crystal salt until smooth. Add a teaspoon of water at a time for a drizzleable sauce. Refrigerate while you cook.

  2. Season the salmon

Pat salmon dry and coat with oil, the remaining salt, pepper, and paprika. Heat a heavy skillet over medium-high heat.

  3. Sear

Place salmon skin-side down and press gently for a few seconds to keep it flat. Cook 5–7 minutes, then turn carefully and cook 2–5 minutes longer. Reduce heat if the surface browns too fast. Check for 145°F in the thickest part. On a clean, oiled medium-high grill, follow the same temperature endpoint and turn carefully once.

  4. Finish with herbs

Plate the salmon and spoon or drizzle over the cold sauce. Serve extra sauce separately. Rice and asparagus shown are optional sides and are not included in the ingredient quantities.

TEMPERATURE NOTE

Salmon must reach 145°F in its thickest part. Check the thickest part with a thermometer, away from bone or the hot pan.

SMALL DETAILS, BETTER COOKS

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. Prep before cooking

Allow about 15 minutes to prepare ingredients and preheat.

  2. Cook with checkpoints

Allow 8–12 min; follow temperature and texture rather than the clock.

  3. Finish and serve

Finish the toppings and serve while hot.

WHEN THE COOK HAS QUESTIONS

A little help.

Can I use skinless salmon?

Yes, but it is more delicate. A nonstick or well-seasoned skillet makes turning easier.

Can I make the sauce ahead?

Yes. Refrigerate in a covered container and use within 3–4 days. Stir before serving.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate in shallow containers within 2 hours, or within 1 hour when it’s over 90°F outside. Keep refrigerated at 40°F or below and use within 3–4 days.

Reheat

Reheat leftovers covered with a little water or broth until they reach 165°F throughout.

Next-day idea

Flake leftover salmon into grain bowls; add chilled sauce after reheating.
