Cooking terms explained
Use the equipment you have

Use Cast iron. A thermometer and everyday kitchen utensils cover the essential checks; special serving gear is optional.

Before you shop

Pantry spices and a normal skillet are enough; no specialty rub is needed.

Make it a meal

Serve with rice and vegetables or slice over a salad.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINEChicken must reach 165°F in the thickest part
  1. Even out the thickness

Pat the chicken dry. Pound thick ends to about ¾ inch between sheets of parchment. Season with salt, paprika, garlic powder, and pepper.

  2. Heat the skillet

Heat a large cast-iron or heavy skillet over medium-high heat. Add oil; it should shimmer without smoking heavily. Add chicken with space between pieces, cooking in batches if necessary.

  3. Sear and finish

Sear undisturbed for 5–7 minutes until golden and the chicken releases easily. Flip and reduce heat to medium-low. Add butter and crushed garlic; spoon the melted butter over the chicken as it finishes. Cook another 5–9 minutes, until each breast reaches 165°F. If garlic starts burning, remove it.

  4. Rest and slice

Transfer to a clean board and rest 5 minutes. Slice across the grain and serve with lemon wedges and a spoonful of pan butter.

TEMPERATURE NOTE

Chicken must reach 165°F in the thickest part. Check the thickest part with a thermometer, away from bone or the hot pan.

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. Prep before cooking

Allow about 10 minutes to prepare ingredients and preheat.

  2. Cook with checkpoints

Allow 12–18 min; follow temperature and texture rather than the clock.

  3. Finish and serve

    Rest 5 minutes before serving.

WHEN THE COOK HAS QUESTIONS

A little help.

Can I use a nonstick pan?

Yes. Use medium heat and follow the pan manufacturer’s heat limits. The crust may be lighter than in cast iron.

The outside is brown but the middle is undercooked. What now?

Lower the heat and cover briefly until the center reaches 165°F. Next time, even out the thickness and begin checking sooner.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate in shallow containers within 2 hours, or within 1 hour when it’s over 90°F outside. Keep refrigerated at 40°F or below and use within 3–4 days.

Reheat

Reheat leftovers covered with a little water or broth until they reach 165°F throughout.

Next-day idea

Slice for sandwiches, salads, or quesadillas.
