Cooking terms explained
Use the equipment you have

Use Griddle. A thermometer and everyday kitchen utensils cover the essential checks; special serving gear is optional.

Before you shop

Use whichever summer squash is best value and keep the sauce ingredients in your pantry.

Make it a meal

Rice is included; add a little sliced green onion if you have it.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINEChicken must reach 165°F in the center of the largest pieces
  1. Start the rice and sauce

Cook rice according to the package. In a small saucepan, combine soy sauce, water, sugar, vinegar, garlic, and ginger. Simmer 2 minutes, then stir in the cornstarch mixed with cold water. Simmer about 1 minute until lightly thickened. Keep this sauce separate from raw chicken.

  2. Set up the griddle

Preheat to medium-high with a lower-heat holding zone. Toss squash and asparagus with half the oil. Coat chicken with the remaining oil using a separate bowl and utensils.

  3. Cook separately

Spread chicken on one area of the griddle, leaving room between pieces. Cook 8–12 minutes, turning regularly, until the largest pieces reach 165°F. On a separate area, cook vegetables 6–10 minutes until tender-crisp and browned, using clean utensils. Keep cooked vegetables on the cooler zone as needed.

  4. Glaze gently

Lower the heat. Toss the fully cooked chicken and vegetables with enough warm teriyaki sauce to coat, for about 1 minute. Keep it moving so the sugar does not scorch.

  5. Serve over rice

Spoon over hot rice and add extra sauce to taste. For a larger batch, cook in rounds rather than crowding the griddle.

TEMPERATURE NOTE

Chicken must reach 165°F in the center of the largest pieces. Check the thickest part with a thermometer, away from bone or the hot pan.

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. Prep before cooking

Allow about 20 minutes to prepare ingredients and preheat.

  2. Cook with checkpoints

Allow 15–20 min; follow temperature and texture rather than the clock.

  3. Finish and serve

Finish the toppings and serve while hot.

WHEN THE COOK HAS QUESTIONS

A little help.

Can I use chicken breast?

Yes. Cut evenly and stop cooking when the largest pieces reach 165°F. Breast can dry out sooner than thighs.

Can I use a skillet instead?

Yes. Cook chicken and vegetables in separate batches in a large skillet, then combine over low heat with the sauce.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate in shallow containers within 2 hours, or within 1 hour when it’s over 90°F outside. Keep refrigerated at 40°F or below and use within 3–4 days.

Reheat

Reheat leftovers covered with a little water or broth until they reach 165°F throughout.

Next-day idea

Pack chicken, vegetables, and rice into lunch bowls and reheat thoroughly.
