Cooking terms explained
Use the equipment you have

Use Oven, Smoker. A thermometer and everyday kitchen utensils cover the essential checks; special serving gear is optional.

Before you shop

Use leftover pulled pork and toppings already in your fridge.

Make it a meal

Serve immediately, with extra toppings on the side.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINEReheated pulled pork must reach 165°F before assembling
  1. Heat the pork

Preheat the oven or smoker to 375°F. Warm refrigerated pulled pork in a covered skillet with a splash of water until it reaches 165°F. Stir in BBQ sauce. Freshly cooked hot pork can go straight into assembly.

  2. Build a shallow layer

Spread half the chips on a large rimmed sheet pan. Add half the cheese and pork, then repeat. Keep the layers shallow so the chips in the center get toppings without becoming soggy.

  3. Melt the cheese

Bake or smoke 8–12 minutes, just until the cheese melts and the edges are hot. Watch closely so the exposed chips do not burn.

  4. Finish fresh

Top with tomatoes, onion, guacamole, sour cream, jalapeño, and cilantro. Serve immediately with lime wedges. Add cool toppings only after the pan leaves the heat.

TEMPERATURE NOTE

Reheated pulled pork must reach 165°F before assembling. Check the thickest part with a thermometer, away from bone or the hot pan.

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. Prep before cooking

Allow about 15 minutes to prepare ingredients and preheat.

  2. Cook with checkpoints

Allow 10–15 min; follow temperature and texture rather than the clock.

  3. Finish and serve

Finish the toppings and serve while hot.

WHEN THE COOK HAS QUESTIONS

A little help.

Can I start with raw pork?

This timing assumes cooked pork. Use the pulled pork recipe for the separate long smoke, then measure out the cooked amount for these nachos.

How do I keep the chips crisp?

Use sturdy chips, reheat wet pork before assembly, and add cold toppings just before serving.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate in shallow containers within 2 hours, or within 1 hour when it’s over 90°F outside. Keep refrigerated at 40°F or below and use within 3–4 days.

Reheat

Reheat leftovers covered with a little water or broth until they reach 165°F throughout.

Next-day idea

Store pork and toppings separately when possible; use extra pork in quesadillas.
