Does this cook fit your day?

About 20–25 min hands-on · 43–55 min total

Start with already cooked prime rib. Simmer the dipping jus while reheating the beef, then bake the assembled rolls until the cheese melts and the tops turn golden.

Hands-on time is an estimate for the original batch, including prep and finishing. Total time includes cooking and resting. Larger batches can take longer.
First time? Start here

Warm the sliced beef before assembling. This reduces the time the sweet rolls need to sit in the oven while the filling heats.

Cooking terms explained
Use the equipment you have

A baking dish and ordinary oven are enough. A pellet grill at 350°F over indirect heat also works; use a suitable pan and check the center temperature.

Before you shop

This recipe uses leftover prime rib; buying and cooking a roast solely for sliders adds cost and a separate cook. Cooked roast beef is an alternative.

Make it a meal

Makes 12 sliders: allow two per person with sides, or one each as part of a larger appetizer spread. Serve hot au jus in individual dipping bowls.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINE165°F in the reheated prime rib and center filling; melted cheese and golden tops
  1. Preheat and prepare the rolls

    • Preheat the oven to 350°F. Line a 9 × 13-inch baking dish with parchment or lightly grease it.
    • Slice the connected rolls horizontally as one slab. Place the bottom half in the dish and set the tops aside.
  2. Start the au jus and warm the beef

    • Combine the beef broth, Worcestershire sauce, onion powder, and black pepper in a saucepan. Bring to a simmer and cook for about 5 minutes. Taste before adding any salt; the beef and cheese are already seasoned.
    • While the jus simmers, place the sliced prime rib in a covered skillet with a few spoonfuls of the hot jus. Warm gently until the beef reaches 165°F, separating slices as needed. Remove from heat promptly and drain excess liquid before assembling.
  3. Layer the sliders

    • Cover the bottom rolls with half the provolone. Distribute the warm prime rib evenly, then add the remaining cheese and replace the roll tops.
    • Stir the melted butter, minced garlic, and parsley together. Brush evenly over the roll tops, distributing the garlic pieces so they do not clump.
  4. Bake covered, then uncover

    • Cover the dish loosely with foil and bake for 10–15 minutes, until the cheese melts and the center is hot.
    • Uncover and bake another 5–8 minutes, just until the tops are golden. Watch the garlic closely and cover again if it darkens too quickly. Check that the center filling reaches 165°F.
  5. Slice and dip

    • Rest for 3–5 minutes, then cut along the roll seams into individual sliders.
    • Keep the au jus hot and serve in small bowls on the side. Dip each bite rather than pouring jus over the pan of sliders, which can make the rolls soggy.
LEFTOVER SAFETY

Use prime rib that was promptly refrigerated at 40°F or below and is within 3–4 days of its original cook, or thawed safely from frozen. Reheat leftovers to 165°F. Making sliders does not restart the original refrigerated storage window.

SMALL DETAILS, BETTER COOKS

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. First 15 minutes

Preheat, slice the rolls and beef, and prepare the garlic butter.

  2. Next 10–12 minutes

Simmer the jus and gently reheat the beef while arranging the rolls and cheese.

  3. Next 15–23 minutes

Bake covered to melt the cheese, then uncover to brown the tops.

  4. Last 3–5 minutes

Rest, cut into sliders, and serve with hot au jus.

WHEN THE COOK HAS QUESTIONS

A little help.

Can I use King’s Hawaiian rolls?

Yes. One 12-count package of King’s Hawaiian Original Hawaiian Sweet Rolls works well. Other soft Hawaiian-style slider rolls also work.

How do I keep leftover prime rib from drying out?

Slice it thinly across the grain, gently reheat with a little jus in a covered skillet, and stop as soon as it reaches 165°F. Keep the sliders covered for the first part of baking. Reheating safely may make the beef less pink than the original roast.

Can I use leftover au jus?

Yes. Replace the broth-based jus with about 2 cups of properly refrigerated leftover au jus. Bring it to a rolling boil when reheating, then keep hot for serving. Skip extra seasoning unless needed.

Can I make these on a pellet grill?

Yes. Use an oven-safe pan over indirect heat at 350°F with the lid closed. Follow the covered and uncovered stages, watching the bottom rolls and checking the center reaches 165°F. Timing may vary.

Can I assemble them ahead?

For best texture, slice the meat and rolls and make the butter ahead, keeping perishable ingredients refrigerated. Reheat the beef and assemble just before baking so the rolls do not sit in meat juices.

What if I do not have leftover prime rib?

Thinly sliced cooked roast beef is an alternative. The listed time starts with cooked beef; making a prime rib roast from scratch is a separate cook.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate sliders and au jus separately within 2 hours, or within 1 hour above 90°F. Keep at 40°F or below and use within the original prime rib’s 3–4-day refrigerated storage window; assembling or reheating does not restart that clock.

Reheat

Cover the sliders and warm in a 325°F oven until the center reaches 165°F. Uncover briefly to refresh the tops. Bring refrigerated au jus to a rolling boil separately before serving.

Next-day idea

Serve extra sliced beef and provolone on toasted bread, with the remaining jus reheated for dipping.
