Allow roughly 1¼–1¾ hours. Smoke the vegetables and steak together, blend the sauce while they cook, and warm tortillas during the rest. Use temperature and tenderness checks rather than the clock.

Hands-on time is an estimate for the original batch, including prep and finishing. Total time includes cooking and resting. Larger batches can take longer.

Reserve a little seasoning for the vegetables before rubbing the steak. Cut the finished steak across the visible muscle fibers for tender bites.

Cooking terms explained
Use the equipment you have

The suggested smoker setting is 300°F. Use a grill bag rated for that temperature, following its instructions. A skillet can brown the vegetables, warm tortillas, and optionally sear the steak.

Before you shop

The original batch uses 2 lb flank steak, 3 peppers, 1 onion, 1 avocado, and 12 small tortillas. Pantry seasoning amounts are portions used, not full packages.

Make it a meal

Serve about two small fajitas per person with optional lime wedges. Rice or beans make easy sides. Keep the avocado sauce chilled until assembly.

LET’S COOK

Step-by-step instructions.

YOUR FINISH LINESteak: 145°F followed by a 10-minute rest; vegetables tender
  1. Preheat and mix the seasoning

    • Preheat the smoker to 300°F with indirect heat. This recipe uses 300°F as its suggested setting; cooking times are estimates.
    • Mix all BBQ taco seasoning ingredients. Reserve 2 teaspoons for the vegetables in the original six-serving batch; use the rest on the steak. For adjusted servings, reserve the same proportion—about one-sixth—for the vegetables.
  2. Season and start the vegetables

    • Toss sliced peppers and onion with the avocado oil and reserved seasoning. Place in a smoker-safe grill bag in a loose layer, following the bag manufacturer’s directions and temperature limits. Do not use an ordinary plastic storage bag.
    • Place on the smoker, above or separate from raw meat to prevent drips. Give the vegetables about a 15-minute head start. Allow approximately 45–75 minutes total, checking from 30 minutes and turning or tossing only as the bag instructions permit. Cook until tender; bag type, slice thickness, and crowding affect timing.
  3. Season and smoke the steak

    • Pat the flank steak dry, rub with olive oil, and coat both sides with the remaining BBQ taco seasoning.
    • Place directly on the smoker grates at 300°F. Allow approximately 35–60 minutes, starting temperature checks at 25 minutes. Insert the thermometer sideways into the thickest part.
    • For a smoker-only finish, cook to 145°F. For an optional browned crust, move the steak at about 130–135°F to a preheated griddle or cast-iron skillet and sear about 1–2 minutes per side, checking frequently, until it reaches 145°F. Lower the heat if the seasoning starts burning.
  4. Blend the avocado sauce while everything cooks

    • Blend the avocado, cilantro, sour cream or yogurt, lime juice, garlic, salt, optional jalapeño, and 2 tablespoons cold water for the original batch until smooth.
    • Add more water a tablespoon at a time until thick but spoonable. Taste and adjust lime and salt, then cover and refrigerate until serving. Use the adjusted ingredient quantities for larger or smaller batches.
  5. Rest the steak and finish the vegetables

    • Rest the cooked steak on a cutting board for 10 minutes, loosely tented with foil. USDA guidance is 145°F before removing from heat followed by at least a 3-minute rest.
    • Check the vegetables and continue cooking as needed. Carefully open the grill bag, avoiding hot steam. The bag method may yield softer vegetables with less browning than a pan.
    • Pan alternative: Skip the bag and cook the seasoned vegetables in a large skillet over medium-high heat for 8–12 minutes, tossing occasionally, until tender with browned edges. Cook in batches to avoid crowding. Start during the final part of the steak cook so they finish around serving time.
  6. Warm the tortillas

    • While the steak rests and the vegetables finish, warm tortillas in a dry skillet or on a clear griddle section for about 20–30 seconds per side.
    • Stack in a clean towel to keep warm.
  7. Slice and assemble

    • Slice the steak thinly against the grain, holding the knife at a slight angle.
    • Fill warm tortillas with steak, peppers, and onions. Spoon over the avocado lime cilantro sauce and serve with optional lime wedges.
TEMPERATURE NOTE

Cook whole flank steak to 145°F before removing from heat, then rest at least 3 minutes; this recipe allows 10 minutes. Keep vegetables above or separate from raw meat, and use a grill bag rated for the smoker temperature.

SMALL DETAILS, BETTER COOKS

A few helpful tips

Plan your cook, from prep to plate

Timing is an estimate. Follow temperature and tenderness checks.

  1. First 20 minutes

Preheat to 300°F, mix seasoning, slice the vegetables, and prepare the steak.

  2. Start the vegetables

Put the seasoned vegetables in the grill bag on the smoker, giving them about a 15-minute head start.

  3. Next 35–60 minutes

Smoke the steak while the vegetables cook. Blend and chill the sauce. Check steak temperature from 25 minutes.

  4. Last 10 minutes

Rest the steak, finish vegetables, and warm tortillas. Slice and assemble.

WHEN THE COOK HAS QUESTIONS

A little help.

Can I use my favorite rub or taco seasoning?

Yes. Follow its label for 2 lb steak and season the vegetables separately to taste. Sweet BBQ rubs can scorch during an optional sear, so watch the heat.

Can I brown the vegetables in a pan instead?

Yes. Toss with the listed oil and reserved seasoning, then cook over medium-high heat for 8–12 minutes until tender with browned edges. Work in batches as needed.

What kind of grill bag should I use?

Use a bag specifically intended for grilling or smoking and rated for your cooking temperature. Follow its directions for filling, closing, turning, and heat placement. Ordinary plastic bags are not suitable.

How do I keep flank steak tender?

Avoid overshooting your target temperature, rest the steak, and slice thinly across the muscle fibers.

How can I adjust the sauce?

Add lime for more tang or cold water for a thinner drizzle. Leave out the jalapeño and cayenne for a milder version.

Can I make bowls instead?

Serve the steak, vegetables, and sauce over rice instead of tortillas.

MAKE TOMORROW TASTE GOOD

Keep & reheat.

Refrigerate steak and vegetables in shallow containers within 2 hours, or within 1 hour above 90°F. Keep at 40°F or below and use within 3–4 days. Store the sauce separately in an airtight container with wrap pressed against its surface; use within 1–2 days for best color and flavor.

Reheat

Reheat steak and vegetables to 165°F. Keep the sauce separate and add it cold after reheating.

Next-day idea

Build rice bowls or tuck reheated steak and vegetables into quesadillas; add the sauce after cooking.
